We still have a little while longer in the colder weather, especially in the evenings when the temperatures start to dip. And when the weather is a little rainy, a spring snow comes in, or it’s simply blustery out, there’s nothing like curling up with some cozy comfort food.

While our Sunshine Retirement Living independent living communities offer 24/7 meals prepared by our incredible chefs, we also know that sometimes cooking the actual meal is an important part of the experience. When you want to try something new on a cold evening, check out some of our favorite, warming comfort recipes below!

Cheesy Broccoli Soup

Chock full of delicious and nutritious broccoli, this crispy cheesy broccoli soup is like a hug in a bowl. Packed with antioxidants, fiber, and anti-inflammatory properties, it offers a ton of health benefits. With super simple ingredients and instructions, this soup is an easy favorite to add to your list. We love to pair it with crispy bread, fluffy focaccia, or even some simple crackers to dip in the cheesy goodness!

Goulash

Truly the most classic comfort food, goulash is a Hungarian dish that includes meat, veggies, and starch, which creates a super balanced meal. It’s easy to cook in bulk too, meaning it’s an excellent choice for meal prep for the week. We love that this recipe from Delish offers a couple of variations including swapping out the beef for ground chicken or turkey, or the elbow macaroni for penne or rigatoni, and reminds the home-chef to adjust cooking times for the variations. With many kinds of tomatoes offering a vast flavor profile, this goulash is definitely one to add to your meal plan rotation.

Loaded Mashed Cauliflower

Sometimes a side dish is the thing that really hits the spot, and this loaded mash is absolutely delicious and a wonderful way to get in some extra veggies while still feeling totally decadent. Made with a little bacon, ghee, and cheddar, this side dish truly tastes like a heaping spoonful of heaven! Rich with flavor from the dill weed, garlic, parsley, onion powder, and chives, you’ll never know these weren’t mashed potatoes. Butternut Squash Soup and Grilled Cheese

On nights when you need a quick meal, consider changing up the classic grilled cheese and tomato soup combo by swapping out the tomato soup for butternut squash soup.
