Breast Cancer Awareness Recipe: Pink Creamy Roasted Beet Pasta



In honor of October Breast Cancer Awareness Month, the Sunshine chefs have whipped up some delicious and healthy recipes sure to satisfy your hunger… AND be a great dinner conversation starter. Encourage your friends and family to get their annual mammograms today and serve up this creamy roasted beet pasta dish tonight!



30 fresh beets

10 cups chopped leeks

2/3 cup olive oil

3 tablespoons dried tarragon

3 teaspoons dried thyme

8 cloves garlic

3/4 cup plain Greek yogurt

2/3 cup balsamic vinegar

3 tablespoons agave syrup

3/4 cup vermouth



Heat oven to 350 degrees. Add 1/3 cup olive oil to beets and rub oil all over to coat. Roast until fork tender. Approximately 1-2 hours.

Add 1/3 cup olive oil to pan and add leeks, garlic, tarragon and thyme. Sauté for 5 to 7 minutes or until tender.

Add vermouth and remove from heat. Add beets, leek mixture, yogurt, balsamic vinegar, salt and agave to blender or food processor. Blend on high until smooth and creamy.

Cook pasta according to package instructions. Add pasta and sauce to heated pan. Let sit for 2 to 3 minutes until pasta has absorbed some of the sauce. Garnish and serve.
