Ingredients for Cake:
16 large eggs
3 cup oil
3 cup unsweetened applesauce
3 cup water
8 teaspoons vanilla
10 cups sugar
14 cups A.P. flour
4 tablespoon cinnamon
2 teaspoon allspice
4 teaspoon ground nutmeg
6 teaspoons salt
8 teaspoons baking soda
8 teaspoons baking powder
6 pounds carrots, washed and ends trimmed, grated
Ingredients for Frosting:
Mock Frosting
8 cups ricotta
12 Tablespoon Honey
4 tsp vanilla
Whip till smooth and refrigerate immediately
Directions:
Combine wet ingredients together and add sugar then whisk till well combined – Combine dry ingredients together and whisk until well combined – fold dry into wet until moistened then fold in carrots until evenly distributed and use baking pan of choice – Cook at 325 degrees F until toothpick or cake tester comes out clean.
