Cauliflower Rice

Cauliflower Rice


1 head cauliflower
1 tbsp. coconut oil
sea salt, to taste
black pepper, to taste
Preheat oven to 375. Cut the cauliflower into florets and place them in a large food processor. Pulse until a rice-like consistency is reached. Transfer the rice to a large bowl and add coconut oil and spices, stir to combine. Line a large baking sheet with parchment paper and place the rice on the baking sheet. Use a spatula to spread the rice out in an even layer. Bake for 15-20 minutes or until rice is starting to brown.
