Chocolate Apricot Shake

Serves: 1
Prep time: 10 minutes
1 Thai young coconut, water and flesh (or 12 ounces nut milk + 4 ounces coconut milk)
2 ripe apricots, stone removed
2 soft Medjool dates, pits removed
2 tablespoons cacao powder
¼ teaspoon ground cinnamon
2 teaspoons freshly grated ginger
pinch of sea salt
Place all the ingredients into a high speed blender and blend well for 45 seconds. Pour into your favorite glass and enjoy!
