Cozy Meals for Winter from Our Retirement Living Communities

Warm up this winter with a delicious homemade meal

As the weather gets colder, the need for comfort food arises. With so many options out there, it can be tough to meal plan, and easy to get into a weeknight food rut. Luckily, residents of our amazing retirement communities benefit from healthy and tasty chef-created meals 24/7, and can always find something to satisfy cravings at all times! For those times you’re dining with us, or if you’d like to cook something at home with or for your loved one, we have compiled a few of our favorite new recipes that are sure to fill bellies with warmth and a little bit of love.

This Hungarian dish that includes meat, veggies, and starch, creates a super balanced, cozy winter meal, and one that will have everyone reaching for seconds. We love that this recipe from Delish offers a couple of variations including swapping out the beef for ground chicken or turkey, or the elbow macaroni for penne or rigatoni. The best part about the recipes is that it reminds the home-chef to adjust cooking times for the variations! With a variety of tomatoes offering a vast flavor profile, this goulash is definitely one to add to your meal plan rotation.

Butternut Squash Soup

There’s something so comforting about a piping hot bowl of soup on a cold winter’s night. While many people give into the allure of a stew or big hearty dish, sometimes a nice delicate soup is what really hits the spot. On those nights, we suggest trying this butternut squash soup from Love and Lemons. The fiber and nutrients of the butternut squash is filling without overstuffing, and the soup pairs nicely with a grilled cheese sandwich or even a nice grilled chicken breast. The best part about making soup is that there is usually plenty for leftovers to take you through the week!

Winter Citrus Salmon

Fish and citrus usually is a combination for the summer, but citrus is actually usually in season during the winter! Bright and tart citrus pairs really nicely with the richness of the salmon in this recipe from How Sweet Eats. The simplicity of this dish doesn’t mean that it won’t stand out as the star of a cozy winter meal. The tangy winter citrus salsa dolloped on top of the salmon will pair really well with a nice couscous or quinoa side. We recommend throwing this dish into your rotation often, as it’s packed with omega-3s, healthy fats, as well as the ever important vitamin C.

Creamy Polenta

Another purely comforting dish, polenta is an Italian cornmeal dish that serves perfectly as a base to meats, vegetables, sauces, and even a hearty helping of cheese when you’re feeling a little indulgent. This easy creamy polenta with roasted vegetables is the perfect dish for a cold night. We love the pairing of the tangy, creamy goat cheese with the hearty polenta. The sweetness of the beets and the strong flavor of the fennel bring this dish home, and will make it one of your favorites all winter long.

When the temperature dips and the nights get darker earlier, there’s nothing like a cozy winter meal that hits the spot. While the members of our community can enjoy meals at any time created by our amazing chefs, we’re sure there are days you’d like to treat your loved one with a little home cooking. We hope you find these recipes great options to share with your friends and family this winter!
