Delicious Plant-Based Snacks For Our Independent Living Communities

Indulge in a healthy but delicious snack this spring!


Keeping healthy eating habits doesn’t have to be hard, especially in the spring when fruits and vegetables are plentiful! Luckily for residents of our Sunshine Retirement Living independent communities, we provide amazing snacks created by our chefs 24/7! However, we know that sometimes you want to dine outside of our community or create some delectable treats of your own. So this spring, instead of snacking on things that aren’t filling or aren’t particularly healthy, consider substituting some fiber-rich, plant-based snacks! Check out some of our favorite suggestions below!

Roasted Chickpeas

Perhaps the most delicious way to eat chickpeas is to roast them. Chickpeas are packed with fiber, protein, and healthy fats. They are truly an all-encompassing snack on their own. But rather than eat them straight out of the can, consider taking a few minutes to season them with some sea salt, chili powder, garlic powder, and pepper and roasting them in the oven until crispy. Drizzle a little olive oil on them before popping them in the oven to give them a little extra crisp. We guarantee you’ll be making these all year long!

Avocado Toast

People love avocado toast as a snack, and for good reason. Packed with healthy fats, avocado is creamy and versatile – an excellent pairing for toast! Grab your favorite whole grain bread and pop it in the toaster. Once it’s done, spread some ripe avocado and top with your favorite seasonings, vegetables, or a drizzle of olive oil for a healthy treat that’s out of this world delicious. Pear and Fig Salad

Simple, delicious, and packed with flavor, this fall salad features crisp pears, tart goat cheese, and toasted pecans and pepitas all on a pepper arugula base that can truly be enjoyed any time of year! With a fragrant and slightly sweet vanilla and fig dressing, this salad is anything but bland. We suggest adding fresh or dried figs to the mix for a bit of an added boost of flavor. Make it in bulk and have it throughout the week, and enjoy having a healthy salad snack any time of day. There’s nothing better than sneaking in an extra serving of greens every day, and we think the best way to do that is to include a bit of goat cheese in the mix.

Vegan Energy Balls

Don’t let the word vegan scare you – it simply means these energy balls do not have any animal products in them. Vegan dishes can pack plenty of protein and be incredibly tasty. These energy balls are made from dates, peanuts, and chocolate chips. The peanuts add a healthy dose of fats and protein, while the dates give a little fiber and sweetness. The chocolate is just for a hint of fun, but you can substitute it for something else if you prefer to keep the chocolate out of the recipe. We suggest a hint of cinnamon and coconut for a tropical but spicy twist!

We love a good snack, and know you do too. While we definitely don’t recommend blowing your diet by eating only snacks, we do think a healthy plant-based snack gives you a good boost of energy during the day, and helps keep cravings at bay. So, when you’re craving something sweet like ice cream or cupcakes, consider eating a couple of vegan energy balls to satiate your sweet tooth. Or, instead of a whole bag of chips, whip out the roasted chickpeas!
