Rosemary Chicken and Potatoes

You can’t go wrong with a flavorful roasted chicken recipe like this one from Tori Avey. The fresh sprigs of rosemary and brightness of the lemon remind you that summer is in the air. To make this dinner, you will be brushing bone-in, skin-on chicken thighs with olive oil and seasoning with salt and pepper. You’ll then cut up potatoes into chunks, toss them in a large mixing bowl, and add olive oil, salt, pepper, minced garlic, and dried rosemary. Next, on a sheet pan, you’ll layer your potatoes, a bed of fresh rosemary, slices of fresh lemon, and finally the seasoned chicken thighs. Bake everything in the oven at 400 degrees for 30 minutes, then take it out to briefly stir the potatoes. You’ll then increase your oven’s temperature to 450 and bake for 10-20 minutes longer, until everything is fully cooked and the chicken has an internal temperature of 165. We recommend adding a green vegetable on the side such as steamed broccoli or asparagus. We can’t wait for you to enjoy this dinner idea!

Veggie-Packed Pasta Salad

There’s a reason this perfect-for-summer pasta salad recipe has a five-star rating and almost 100 reviews: it’s full of nutrients without sacrificing taste! This recipe from Feel Good Foodie is heavy on the vegetables and easy to make ahead of time. You’ll need your favorite pasta, cucumbers, tomatoes, baby spinach, red onion, feta cheese, and olives to make this dish. To make the dressing for the pasta salad, simply combine olive oil, red wine vinegar, oregano, dijon mustard, garlic, fresh mint, salt, and pepper in a bowl using a whisk. Once you’ve cooked your pasta and added your veggies, pour the dressing on top and toss to combine. If you want to add some protein to bulk up this salad, consider adding grilled chicken, chickpeas, or shrimp.

Quesadillas with Greek Salad

This comforting quesadilla recipe is one you and your loved one are sure to enjoy. This meal idea from Chatelaine makes a perfect picnic lunch while focusing on whole grains and fresh vegetables. When you’re wanting something that tastes like comfort food but still helps maintain a healthy lifestyle, look no further! To make the filling for the quesadilla, you’ll combine sauteed green onions and spinach with crumbled feta in a bowl. Place a large whole-wheat tortilla in a pan over medium heat and add some of the feta mixture onto half of the tortilla. Flip and cook on both sides until golden brown. Add a side salad of tomatoes, green onion, lemon juice, cucumbers, olive oil, and feta to your plate and you’ve got a tasty and nutritious lunch ready in minutes!
