Rosemary Chicken and Potatoes

You can’t go wrong with a flavorful roasted chicken recipe like this one from Tori Avey. The fresh sprigs of rosemary and brightness of the lemon remind you that summer is in the air. To make this dinner, you will be brushing bone-in, skin-on chicken thighs with olive oil and seasoning with salt and pepper. You’ll then cut up potatoes into chunks, toss them in a large mixing bowl, and add olive oil, salt, pepper, minced garlic, and dried rosemary. Next, on a sheet pan, you’ll layer your potatoes, a bed of fresh rosemary, slices of fresh lemon, and finally the seasoned chicken thighs. Bake everything in the oven at 400 degrees for 30 minutes, then take it out to briefly stir the potatoes. You’ll then increase your oven’s temperature to 450 and bake for 10-20 minutes longer, until everything is fully cooked and the chicken has an internal temperature of 165.
