Fall is here, which means that now is the time to start taking advantage of delicious fall produce! Here at Whitetail Springs Memory Care Community in Pittsburgh, we are proud to have incredible chefs who work tirelessly to create the most delicious meals focusing on fresh, seasonal produce and nutrient-dense ingredients. Drawing inspiration from the MIND (Mediterranean-DASH Intervention for Neurodegenerative Delay) diet, the meals we serve here daily are carefully designed to provide your loved one with meals that are just as good for their mind as it is for their taste buds!

Butternut Squash Soup

This classic dish is a mouth-watering must-have this fall. Incorporating roasted butternut squash, aromatics like shallots and garlic, and spices like nutmeg, this dish has fall comfort written all over it. In terms of the MIND Diet, butternut squash falls into the category of “other” vegetables that are recommended throughout the day to increase fiber and nutrient intake.

To boost the flavor even more, try topping this soup off with a drizzle of olive oil, which incorporates the healthy fats that the MIND Diet emphasizes. Fall Kale Salad

A dish that many might not think of for fall is a delicious green salad. One of our favorite ways to incorporate dense hearty greens into a diet is by using them as a base for a salad! Two of our favorites are spinach or kale topped with delicious veggies, seeds, and/ or nuts. Adding a protein such as grilled chicken or fish makes any salad a well-rounded meal. For a salad with a fall flair, we found this yummy Fall Kale Salad recipe, which recommends a kale base topped with crisp apples, dried cranberries, roasted butternut squash or sweet potatoes, your favorite nuts, and goat cheese. Top it with an olive oil-based dressing, and this salad meets many of the criteria for the MIND Diet as well!

Wild Rice Soup with Seasonal Veggies

The third and final dish that we recommend trying this fall is wild rice soup. There are many variations of this delicious meal, but the basics are wild rice and a yummy broth cooked with other veggies. We recommend adding chopped kale, chicken for protein, and other fall vegetables like butternut squash, sweet potatoes, or even roasted pumpkin. Incorporating kale and a rice base helps incorporate the whole grains and dense greens emphasized in the MIND Diet.
