Cream Cheese Vegetable Wrap

If you love burritos, this lunch will surely hit the spot! A great option for when you want things to be quick and easy, this cream cheese wrap from Eating Well requires no cooking and very little assembly. Here’s what you’ll need:

  • Cream cheese
  • Dried chives
  • Dried dill
  • Garlic powder
  • Whole-wheat flour tortilla
  • Baby spinach
  • Shredded or sliced vegetables, such as carrots, bell pepper or cucumber

To make this, combine your cream cheese, garlic powder, dill, and chives in a bowl. Layer this mixture evenly on your tortilla. Next, carefully layer the baby spinach and then the vegetables on top. Roll up, cut in half, and enjoy!

Hummus Sandwich with Vegetables

Another nutrient-rich lunch option is this hummus sandwich from Eating Well. The colorful vegetables ensure that you’re getting lots of great nutrients so you can feel energized all day! To make it, you’ll need:

  • Whole-grain bread
  • Hummus
  • Avocado
  • Mixed salad greens
  • Red bell pepper
  • Cucumber
  • Shredded carrot

To whip up this sandwich, spread one piece of bread with hummus and the other with smashed avocado. Then simply add your greens, bell pepper, cucumber, and carrots, and you’ve got yourself a delicious, portable lunch perfect for a picnic!

Healthy Pasta

Craving some comfort food? Look no further than this one pot pasta recipe from Erin Lives Whole. The hearty and satisfying flavor will make you forget that it’s also good for you! Here’s your main ingredient list:

  • Yellow onion
  • Brown rice pasta
  • Broccoli
  • Mushrooms
  • Pasta sauce
  • Spinach

For this meal, you’ll first saute the onion in olive oil and add the garlic. Then add everything to a large pot, add chicken stock, and cover with a lid. Bring to a boil. After letting the mixture simmer and most of the liquid is absorbed, your delicious meal is done!

Tuna Salad

To give yourself a great boost of protein, this green goddess tuna salad from Eating Well should definitely be in your rotation. This lunch can be made as a dip with some whole wheat crackers, on a sandwich with multi-grain bread, or in a wrap! You’ll need:

  • Garlic
  • Fresh herbs like dill, cilantro, and basil
  • Lemon juice
  • Greek yogurt
  • Honey
  • Olive oil
  • Canned tuna

First, place all ingredients except for the tuna into a food processor or blender and blend until smooth. In a medium bowl, flake the canned tuna. Add your dressing to the bowl, mix together, and enjoy your lunch!

Chicken Pot Pie Soup

If you have a slow cooker, you need to try this chicken pot pie soup recipe from the Clean Eating Couple! If you love pot pies, you probably know the base ingredients:

  • Chicken breast
  • Celery, carrots and onions
  • Potatoes
  • Chicken broth

You’ll start this lunch by sauteing your vegetables in olive oil. Second, place all ingredients in the slow cooker and set to low heat for six hours. When it’s ready, remove some potato pieces, milk, and some broth from the slow cooker, blend until smooth, and then add back to the pot. After you shred your chicken pieces, you’re ready to dig in!
