There’s something about spring and summer that gives everyone a hankering for fresh fruit and vegetables. Not only is some of the most delicious produce in season, but they are a good secondary source of water for staying hydrated during the warmer months! And while we love a good simple salad or grabbing a sweet Georgia peach and biting into it ripe off of the branch, it’s time to get a little creative with our recipes!

At Dunwoody Pines Retirement Community, we have compiled a list of some of our favorite refreshing warm weather recipes to spice up your weekly meal plans! Check out some of our favorite ideas below:

Grilled Fruit

There’s so many ways to get a serving of fruit, but one of our absolute favorites is by grilling. We don’t usually think of hot food as refreshing, but with fruit, the heat brings out the juice in the fruit making it one of the most deliciously refreshing treats in the warm weather. Grilled watermelon sprinkled with feta or paired with burrata is a great option for those looking for something a little less sweet.

For those with a sweet tooth, we love creating grilled fruit kebabs with pineapple, peaches or nectarines, and plums, and dipping them in fresh whipped cream or, our favorite, whipped mascarpone cheese – which offers a little bit of tang! For those who want a little spice with their juicy fruit, we love grilling pineapple with a sprinkle of cayenne pepper on either side. It’s a spicy and sweet combination that gets our mouths watering!

Spinach, Basil, and Plum Salad

When thinking about salads, it’s so easy to get stuck in a little garden salad rut. But never fear! We have the most delicious simple salad to perk up your weekly lunches or dinners. Combining earthy spinach, herby basil, and succulent plums, this recipe from Food & Wine is an incredible option for those looking for something out of the box. Adding salt, pepper, balsamic vinegar, and a couple of zesty citrus juices (orange, lemon, and a bit of lime zest) gives the salad a bit of brightness as well! If you’re looking to add in a little protein, we recommend adding in some chilled tuna, cannellini beans, or even a crumble or two of briney feta.

Watermelon-Lime Agua Fresca

Nothing screams summer like watermelon, and this amazing mocktail is truly a summer treat. Simple and the epitome of refreshing, this four-ingredient mocktail is great for all ages and is the perfect treat to serve at your next cookout! Blending water, watermelon, sugar, and lime juice, this drink is incredibly hydrating, while not sacrificing big flavors. We recommend experimenting a bit with it and adding new flavors, like a splash of peach or blueberry puree, or even a fun herb like rosemary or basil. We have a feeling this will quickly become your go-to summer mocktail!

There are so many ways to enjoy a warm weather day with refreshing foods, and we hope you try out these tasty recipes this spring and summer. If you’d like to bring some by our amazing retirement community, we wouldn’t mind trying a sample!
