Sweet Potato Beet Hash

Sweet potatoes are a fall favorite. Making this sweet potato breakfast for yourself or a loved one will be a great start to the day, and the fiber in the sweet potatoes and beets will keep you full! This recipe is a twist on classic fried eggs by adding beets and sweet potatoes. To make this you’ll need:

  • Sweet potatoes
  • Beets
  • Dried sage
  • Olive oil
  • Eggs
  • Black pepper

The first step in creating this breakfast is to cook the sweet potatoes and beets with olive oil in a pan. Next, stir in the sage until mixed well. In a large pan, heat the olive oil and place over medium-high heat. Then, make an open space in the vegetables on each side of the pan, and crack an egg into each space. Reduce the heat to medium-low, cover, and cook for a few minutes, until the eggs are set to your liking.

Broccoli Cheddar Mac and Cheese

If you’re in the mood for a meatless meal and a comfort food all in one, this pasta recipe from Eating Well is the perfect choice for a fall lunch! The cheese makes this a calcium rich dish and the broccoli adds some great micronutrient benefits. With only ten ingredients, you can’t go wrong! Here is everything you’ll need:

  • Whole-wheat penne pasta
  • Broccoli florets
  • Butter
  • All-purpose flour
  • Low-fat milk
  • Salt
  • Smoked paprika
  • Shredded sharp Cheddar cheese
  • Grated Parmesan cheese
  • Panko breadcrumbs

When you’re in the mood for this lunch, start by bringing a large saucepan of water to a boil.   • Parmesan cheese
  • Panko breadcrumbs
  • Lemon zest
  • Brussels sprouts
  • Red onion
  • Chicken thighs

To make this for yourself or a loved one, stir parmesan, oil, breadcrumbs, lemon zest, thyme, salt and pepper into a mixing bowl. Second, toss brussels sprouts, onion and garlic, salt and pepper on a large baking sheet. Add chicken and lemon to the pan, and ensure everything is in a single layer. Brush the chicken with oil. Top with the parmesan mixture. Bake in the oven until cooked through, and enjoy!
