While everything is okay in moderation, it’s easy to neglect our nutrition during this time of year. At Juniper Glen Memory Care Community, we focus on the MIND Diet. Our incredible team of chefs take care to provide our residents with nutritious meals each and every day. However, we love encouraging creativity in the kitchen, and we encourage our residents and their loved ones to try new and nutritious foods. Here is a list of a few of our favorite healthy foods to try this fall:

Crispy Roasted Brussels Sprouts

A simple, delicious, and healthy side dish for any occasion! This veggie recipe focuses heavily on the flavor of the brussels sprouts and the delectable texture that getting them really crispy can add. In addition to being incredibly delicious, this recipe is a great dish to make when following the MIND Diet. The brussels sprouts fall under the “leafy green” food group, and olive oil is one of the healthy fats that the MIND Diet focuses on. With only 4 simple ingredients, this is a must-add to your weekly meal plan this fall! To make this dish you will need:

  • 1 ½ pound brussels sprouts
  • 3 tablespoon olive oil
  • ¾ tablespoon kosher salt
  • ½ teaspoon black pepper

Italian Wedding Soup

Named for the marriage of flavors on this hearty and healthy soup, this dish is the perfect addition to your loved one’s fall recipe rotation. We love this soup because it is the best dish to make and eat all week–or to feed a large crowd. Nothing screams fall quite like pumpkin flavored everything. That is why this dish incorporates the autumnal staple in a classic way. The creator of this recipe also claims that she tweaked the spices a little bit to make it feel even more appropriate for the fall season, and we are not mad about it! Packed with pumpkin, bell peppers, tomatoes, and lean ground turkey, this chili is full of incredible nutritional value while still being very tasty.
