Nothing quite hits the spot like a rich and creamy dessert after a long day! Here at Park View Estates Assisted Living and Memory Care, it’s important to us that our residents have delicious and healthy meals around the clock. We incorporate foods from the Rush University Medical Center MIND Diet that fosters brain health. Still, we know that sometimes a sweet treat is what you need. Take a look at these no-bake dessert ideas if you and your loved one are in the mood for something delectable!

Ambrosia Salad

While the word “salad” is in the name, we’re sorry to say there’s no vegetables in sight for this dessert! This ambrosia salad recipe from the Pioneer Woman is a traditional treat served at many big family gatherings, made with fluffy marshmallows and a variety of colorful fruit. Here’s what you need to make it:

  • Cream cheese
  • Powdered sugar
  • Vanilla extract
  • Heavy whipping cream
  • Sour cream
  • Mandarin oranges
  • Pineapple tidbits
  • Mini marshmallows
  • Shredded sweetened coconut
  • Maraschino cherries
  • Pink grapefruit
  • Toasted coconut chips

To make this dessert, add the cream cheese, powdered sugar, and vanilla to a mixing bowl and beat on medium speed until smooth. Transfer that to a small bowl, then add the heavy cream to the first mixing bowl and beat on medium speed until soft peaks form. Next add the cream cheese mixture back to the bowl and continue whipping until stiff peaks form. Then fold in the sour cream, followed by the mandarin oranges, pineapple, marshmallows, and shredded coconut. Finally, place the mixture in a casserole dish or bowl to sit overnight. Right before serving, top the salad with cherries, grapefruit, and coconut chips. Enjoy!

Peanut Butter Cookies

If your loved one is a peanut butter lover, this no-bake dessert is the perfect match! Made with all the classic ingredients for cookies, but minus the wait time in the oven, we know you’ll love this peanut butter cookie recipe from Wilton. Here are the ingredients:

  • Butter
  • Granulated sugar
  • Milk
  • Smooth peanut butter
  • Vanilla extract
  • Salt
  • Old-fashioned oats
  • Chocolate chips

First, prepare a cookie sheet with parchment paper. Second, in a medium pan, add butter, sugar and milk. Cook over medium heat, stirring occasionally until melted. Next, allow it to boil for one minute, then remove the saucepan from heat and stir in the peanut butter, vanilla extract and salt. Add oats and stir until coated. Then, drop your mixture by the spoonful onto the prepared cookie sheet. Allow to sit at room temperature until firm. Finally, in a small microwavable bowl, melt chocolate chips. Drizzle the chocolate over your cookies, and enjoy!

Banana Pudding Parfaits

For our last no-bake dessert, we wanted to offer something a little lighter but just as delicious. This banana pudding parfait recipe from Eating Well is the perfect, refreshing end to your day. Here are the only ingredients you’ll need to make it:

  • Bananas
  • Whole-milk vanilla Greek yogurt
  • Sugar
  • Vanilla wafer cookies
  • Whipped cream

For these parfaits, start by mashing a banana in a medium bowl. Next add yogurt and sugar and mix together. Then sprinkle the crushed cookies on the bottom of a clear glass. Top the cookie layer with the banana yogurt mixture and a few banana slices. Repeat the layers two more times. Lastly, top with any remaining crushed cookies and whipped cream, and enjoy!
