These Pink Deviled Eggs are more angelic than devilish – serve them up today as a “Think Pink” conversation starter. National Mammography Day is… October 16 and a perfect excuse to whip up this easy and delicious snack. Be sure to tell your guests that mammograms have helped decrease breast cancer morality by 1/3 and the need for annual screening increases in women over 40.
Pink Deviled Eggs
Ingredients:
60 eggs, hard boiled and peels
1 jar picked beet juice
1 cup mayonnaise
1 1/3 cup Dijon mustard
10 picked beets, grated
10 tablespoons grated onion
salt and pepper to taste
Directions:
Placed hard boiled eggs in beet juice. Add water so that juice covers the eggs. Marinate for 1 – 2 hours in the refrigerator until deep pink.
Halve eggs and remove yolks. Place yolks in a bowl and mash. Add mayonnaise, Dijon mustard, grated beet, onion, salt and pepper. Mix well and add mixture to pastry bag, pipe into eggs. Serve slightly chilled.
