It’s time to get cozy! With the cooler weather returning and winter right around the corner, we’re soaking up all of the autumnal bliss we can. What better way to take in fall than by cooking hearty and delicious meals for your loved ones?

At our senior retirement communities in Massachusetts, your loved ones enjoy 24/7 access to incredible chef-made meals. But we do understand that cooking together brings you together, so we’ve come up with a list of some of our favorite healthy meals to make and enjoy with your loved one. Check out the delicious recipes below!

Pear and Fig Salad

Simple, delicious, and packed with flavor, this fall salad features crisp pears, tart goat cheese, and toasted pecans and pepitas all on a pepper arugula base. With a fragrant and slightly sweet vanilla and fig dressing, this salad is anything but bland. We suggest adding fresh or dried figs to the mix for a bit of an added boost of flavor. Make it in bulk and have it throughout the week, or use that big batch for a family dinner–everyone will be begging for seconds!

Acorn Squash Soup

Beautifully plated and incredibly tasty, this homemade soup is going to be your go-to for all of the cold weather months. This savory and slightly sweet acorn squash soup is easy to make, vegan, and filling enough to have as your entree. Served in the hollowed out acorn squash, it’s also gorgeous to serve at your next dinner party. The recipe suggests adding lentils for an extra protein boost, and we love the idea. You could also substitute in some chickpeas or even a bit of quinoa on the top for a little texture and protein. The great thing about this soup is that it’s flexible and easily customized to fit your particular diet!

Kale and Sweet Potato Curry

For those who love exciting flavors and like a little extra spice, this kale and sweet potato curry is an excellent recipe for fall! A Thai curry, this dish uses red curry paste which is made from red chilis, garlic, and lemongrass. Pairing it with the bitter kale leaves and the starchy and hearty sweet potato makes it a manageable level of spicy. For protein, the recipe relies on peas and nutty cashews. If you have a nut allergy, you can substitute the cashews with chickpeas or pinto beans. Serve with some brown rice or quinoa, and you have an amazing meal for days on end!

Balsamic Beets

While beets are not everyone’s favorite, we have a feeling that this particular recipe will change that opinion for even the most skeptical. This recipe from Joy Food Sunshine takes roasted beets and drizzles them with a sweet homemade balsamic glaze. Truly perfect for a side dish at any of your dinner parties, these beets are also so good that it’s hard to pass up eating them as a full meal! For a little extra oomph, we suggest adding a dollop of sour cream or even a sprinkle of caraway seeds for an extra crunch and flavor. We dare you to try and savor these sweet nuggets of roasted veggie goodness.

Whether you’re simply trying to eat a little healthier or you’re looking to completely overhaul your diet and adopt a vegetarian lifestyle, these recipes are a great place to start! Share them with some friends at a dinner party, or bring in the dishes to our community for a special lunch date with your loved one. Don’t forget to save a little extra for us!
