It’s so easy to get into a meal rut. We learn to cook something that winds up being a hit with the family, and it immediately goes into the weeknight meal rotation. But those recipes quickly get stale and have us itching for something new. One of our favorite ways to get out of that rut is to dedicate one or two weeknights to trying a brand new recipe. Block off an extra thirty minutes for learning something new, and pretty soon you’ll have a veritable library of easy but tasty weeknight meals to whip up whenever you’re craving something a little different.

From Park View Estates, our Santa Ana memory care home, here are some great recipes to try out at home, and bring to share with your loved one in our care.

Homemade Healthy Ramen

First up is a favorite from Half-Baked Harvest – her Better for Your Chicken and Spinach Ramen. Rich, warm, and full of heart healthy veggies, this ramen recipe gives a hearty dose of greens, immunity boosting garlic and ginger, and a recommendation to use whole wheat noodles for a good dose of fiber. While ramen can seem intimidating, once you have perfected the steps, it all comes together in no time at all. Make extra to have for lunch the next day, or to bring to your loved one in our care. Everyone will want a bowl!

Tikka Fish

A favorite of the takeout world, Indian cuisine can be surprisingly easy to make, and is always delicious. For a bit of a twist on a classic, we suggest swapping out chicken for mouth-wateringly light white fish. Luckily for you, the New York Times cooking page offers this sumptuous tikka masala recipe. Even better than the creativity of it all? It is a sheet pan recipe, which makes preparation of this dish (and the clean-up) all the easier.

Breakfast for Dinner

A classic favorite mix-it-up kind of meal, try breakfast for dinner one night! Spinach, mushroom, and cheese omelets as your entree, and sweet pancakes for dessert, there’s nothing more fun than slipping into your pajamas for dinner and living it up in this theme. For a unique twist, consider adding a French influence with light and airy crepes – a traditional thin French pancake. Crepes can be savory or sweet! For those savory fans, ham, cheese, and eggs can come together as a sort of breakfast burrito idea. For those who love sweets, consider doing it the French way with butter, sugar, and cinnamon, or create a decadent dessert with fresh fruits, chocolate, and whipped cream.

Sweeten it Up!

Brussels sprouts have made one of the most iconic comebacks in the last 20 years. No longer the mushy, boiled tiny cabbages of yesteryear, they have been elevated to crispy, bacon-dotted bites of heaven. Though they have made that comeback, we think they haven’t been experimented with nearly enough. We’re going gaga over this Bon Appetit take on the sprout. With a little heat, and plenty of sweetness from honey, these are sure to be a quick favorite of all. Our one twist on the recipe? Consider using raw local honey for both added sweetness and crunch, as well as a boost to your system in time for allergy season.
