Don’t let the arrival of fall cramp your summer style with these flavors
Fall may have officially arrived, but Georgians are still feeling the heat. That means we have a few more weeks to enjoy summer-inspired flavors before we tuck in for a chilly fall.
At Marshall Pines Memory Care & Transitional Assisted Living in Evans, near Augusta GA, we’re always looking for ways to switch things up when it comes to our residents’ meals. Did you know our chefs follow the MIND Diet when crafting each meal for our residents? The MIND Diet is a research-backed diet created by Rush University Medical Center researchers that have been proven to benefit the memory and brain health of those who follow it! With that in mind (pun intended), we’ve put together some summer recipes to spark creativity in the kitchen!
Start things off with a snack!
Summer-inspired snacks don’t have to be super complicated. They can be as easy as putting mixed berries and fruit in the freezer! This snack doubles as a healthy alternative to popsicles and other unhealthy sweets and is a great way to cool down in the summer heat. Berries are packed with antioxidants and other nutrients and are also recommended fruit by the MIND Diet. Bananas are also a great fruit to eat frozen and are a great source of potassium! If you have a bit of a sweet tooth, try putting frozen berries in a bowl with a spoonful of cool whip, it’s a tasty treat and still a bit healthier than traditional ice cream or popsicles!
Nothing says summer-inspired like seafood. So add some healthy protein into the mix with a delicious seafood salad! Seafood is a great source of protein and healthy fats and a highly recommended protein source from the MIND Diet! Spice up your average salad with shrimp, crab meat, fresh orange, lemon, lime, red pepper, and sweet onion. Whoever said salads have to be boring?
Grilled Chicken & Mango Skewers
Grilled chicken is another recommended source of protein from the MIND Diet. The protein you want to limit on the MIND diet is red meat, as it’s high in cholesterol. Luckily, there’s so much to be done with chicken! All you need is grilled chicken, mangos, and some sweet corn and green onion as a tasty side to accompany this dish! Season to your liking, and maybe even add a squeeze of lime. These skewers make a great meal or side dish, but this sweet but savory combo is bound to be a new favorite!
