Summer is the season so many of us look forward to all year long. Between longer sunlight, warmer weather, family vacations, and beach days, it’s an easy time of year to love. One of our favorite things about summer is fresh produce found in abundance. There’s nothing better than ending a cookout with sweet and cold watermelon, or ripe red strawberries.

At our retirement communities in Massachusetts, we love to experiment with new, tasty recipes that have a fruity kick, and our residents enjoy exploring new flavors from our incredible chefs! With so much fresh fruit in season, we thought it’d be fun to compile a couple of our favorite fruit-based desserts for you to try with your loved ones this summer. Check out our delicious list below!

Pineapple Citrus Shortcakes

We all know and love strawberry shortcake, but this baking adventure is all about getting creative. Take summer’s ultimate fruit, pineapple, and pair it with sweet shortcake, tart lemon, and delightfully fluffy fresh whipped cream and you have a dessert everyone will be talking about all summer long. Add a little mint for an added pop of flavor, or a hint of cayenne pepper for a kick. You can find this Food Network recipe here.

Strawberry-Pink Lemonade Icebox Cake

Better than anything store bought, this traditional dessert gets a shake up with pulverized dried strawberries and a hefty helping of lemon zest. Initially introduced in the 1920s, the icebox cake was a way to promote the new technology of iceboxes, and to help housewives create equally as intricate looking desserts as trifles or mousses, with less mess and hassle. Pulling in household staples, the icebox cake is easy to make and even easier to store for future summer events. Try making a couple for the summer and taking one out any time there is a hot day and a crowd to please! We love this delicious pink lemonade cake.

Cherry Cobbler

There’s truly nothing more summery than a cherry cobbler. Tart red cherries bursting forth with flavor under hefty buttermilk biscuits and topped with fresh whipped cream is decadent but incredibly fresh and reminiscent of childhood days spent in the backyard with the sprinkler spraying, laughter, and big bowls of cobbler at the end of a cookout. This classic cherry cobbler recipe from delish is a must-try this season.

Peach Sorbet

Last, but certainly not least is this sweet, juicy, peach sorbet from Martha Stewart. A southern staple, peaches are in season for just a short window, so we encourage you to make the best of it! With just a handful of ingredients, peach sorbet is easy to make and is the perfect treat to cool you down on a hot summer day. This particular recipe is super creamy and can be dressed up with different flavors for a fresh spin. A hint of blackberry or mint, or even a dollop of cream can add a little something extra to this classic dessert.

With so many beautiful in-season fruits available during the summer, it’s hard to pick just a few recipes, but we hope these have whet your appetite! We encourage you to try them out, share them with friends and family members, and even bring a helping to us at Sunshine Retirement Living. We’d love to test out your dessert skills!
