Fruit Based Desserts for Guilt-Free Sweet Treats

One of the best things about spring is the return of abundant varieties of fruit. Fresh berries, tangy citrus, and more exotic fruits like kiwi and mango are all in season and perfectly ripe. One of the best ways to enjoy fruit is by swapping it out for richer and heavier desserts – particularly those we’ve been accustomed to enjoying all autumn and winter long. With the later days, brighter sun, and fresh green grassy air there’s nothing more delicious than popping a fresh strawberry into your mouth.

But how can you enjoy fruit with a little creativity, while still being conscious of making healthy choices? You’re in luck! Our community full of senior apartments in Oregon have curated a list of some of our favorite healthier dessert choices. They’re all so good that we dare you to find one you don’t like!

Berry Banana Nice Cream

Simple, refreshing, and scrumptious, there’s nothing better than a big scoop of ice cream on a warmer day. But ice cream can be packed with sugar, and low-sugar store bought ice cream is not nearly as satisfying. That’s where your blender, ripe fruit, and a little freezer action can come in handy! With a few simple ingredients, you can make your own version of ice cream in as little as an hour. All you need is a frozen fruit with a creamier texture like bananas or our personal favorite–dragonfruit, a bit of milk (almond or cow), and a sweetener like honey or maple syrup.

Our favorite combinations are frozen banana, strawberry, almond milk, and honey, or frozen dragon fruit, a splash of almond milk, and a little agave. Mix your selected quantities in a blender until smooth–usually about 30 seconds to five minutes depending on the fruit and the strength of your blender.

Once totally smooth and creamy in texture, spread into a pan and pop in the freezer for at least one hour. Scoop into a bowl, and voila! You’ll have a delicious and healthy bowl of nice cream in no time! For those who are a little hesitant to blend without quantities, take a quick peek at this recipe from The Real Food Dietitians.

Perfect Parfait

We love a good DIY dish, and there’s something incredibly satisfying about a yogurt parfait. A great activity to enjoy with everyone from toddlers to seniors, consider putting together a small parfait bar and encourage your family to fill their cup with layers of creamy yogurt, fresh fruit, a little sweetener, and healthy toppings.

Some of our favorite things to include in a parfait bar are different types of yogurt, like traditional cow’s milk, rich and creamy greek yogurt, toasty coconut yogurt (for those looking for something dairy-free), and lightly sweetened vanilla yogurt for those who don’t love the tart tang of plain yogurt.

Fruit that pairs well with dairy includes the traditional berries of course, but also bananas, peaches, apricots, lychee, cherries, and even pineapple. Then, go crazy with toppings! Some ideas include honey, agave, maple syrup, toasted coconut, crunchy granola, black sesame seeds, flax seeds (for an added health benefit), cocoa nibs, crumbled biscotti, and so much more. This is your time to let your imagination run wild!

Grill it up

As the weather gets nicer, out come the grills! But a grill doesn’t only have to be used for meat and veggies. Grilling fruit brings out a depth of flavor you have to try. We love grilling sweet plums and tangy pineapple for a little added smoke, and plating them with fresh whipped cream or a dollop of mascarpone cheese whipped with a tiny bit of sugar for a bit of richness. You can even get creative and use skewers to create grilled fruit kebabs for your next outdoor party!

There’s no shortage of options when it comes to in season fruit desserts, and we hope that you found one or three you’d like to try this spring.
