The weather is perfect, and everything from parsley to peppers is coming into season. At this time of year, there’s nothing like starting the day right by rustling up a breakfast chock full of in-season fruits and vegetables. With so many incredible flavors of the season, we know it can get a little overwhelming to find the right recipes, especially before a long day. We’ve made a list of some of our favorite seasonal meals in the hopes that you’ll share one (or all) of these with your loved ones this season.

From savory chives to sweet strawberries and everything in between, we have a feeling at least one of these will become a household staple for you. At Hammond Glen, our retirement community in Sandy Springs, GA, we pride ourselves on incredible meals that stick to the MIND diet. That said, we know that sometimes it feels good to take a little break from our kitchen, so feel free to make an extra portion or batch and bring one of these delicious recipes to share with

Skillet Spinach and Chive Quiche

There’s nothing that fills you up at breakfast quite like a quiche. And this green quiche recipe is one you’ll be pulling out for special occasions and every day breakfasts for years to come. One of our favorite seasonal flavors is the mild onion flavor of chive. This Skillet Spinach and Chive Quiche pairs the deliciously savory chive with iron-rich spinach to make an incredibly healthy and delicious breakfast. Even the crust is healthier than usual with almond and chickpea flour substituted for traditional wheat flour. We cannot recommend this tasty dish enough, and hope you love it as much as we do!

Strawberry Galette

We may have already mentioned strawberries on our list, but the beauty of this Strawberry Galette recipe is that strawberries are not the only option! Nothing beats a sweet treat for breakfast, especially a beautifully rustic tart like a galette. While the dough is simply the vessel for the filling, a true galette should be tasty in both filling and dough. This recipe is the perfect base to experiment with. Stick to the original recipe with strawberries and blueberries, or change it up with different fruit combinations. Lemon, apricot, and blackberry offers a delightful twist or try rhubarb, raspberry, and ginger for an even more unique combination. We know you’ll find so much fun in trying out different flavor profiles.

Make-Your-Own Smoothie Bar

Everyone has different tastes, so it can be difficult to make a quick, healthy breakfast that everyone will love. The solution? Get everyone from children to seniors in on the action with a make-your-own smoothie bar! The best part is that these are easy, on-the-go, healthy, and perfectly customizable for everyone in the family.

Grab some fresh, in-season fruits from the grocery store, or head to the freezer section for a variety of pre-cut frozen fruit that is always perfectly ripe (and will last in the freezer for another day)! We love berries, peaches, and tropical touches like mango. To add even more nutrition to your smoothies, grab some fresh or frozen greens like spinach, as well as some protein powders to help keep the family full and fueled for the day. Don’t forget to offer a variety of juices and dairy-free milk options to blend with!

From our kitchens to yours, we hope you have a wonderful spring trying and perfecting these recipes, and do consider sharing them with your loved ones.
