We’re sure we’re not the only ones who are excited for fresh vegetables after a long winter and rainy spring! From the harsh East Coast winters with rain, snow, and frigid temperatures, our residents at our senior retirement communities in Massachusetts can finally rejoice in warmer temperatures, new plant life, and fresh local vegetables to brighten up their dinner plates.
From arugula to zucchini, we’ve curated a list of our favorite seasonal recipes that let vegetables shine as the star of the meal. While our senior living residents enjoy delectable chef-prepared meals through our 24/7 dining program, we know we have friends and family across the country who may not be able to join us for every meal. For those of you at home, we invite you to try some of these truly delicious dishes described below!
While butter isn’t healthy when we overdo it, we recognize that in small doses (and when it’s high-quality), it can be the perfect vehicle for flavor and roasting. This simple sauteed zucchini offers fantastic nutrition from the zucchini while the sautee technique creates a melt-in-your-mouth dish that is sure to please even those who turn their noses up at veggies. With tangy and slightly spicy garlic, a hint of butter, and lemon juice for little zest, we cannot recommend this dish enough.
There’s nothing like risotto to warm up your soul on a cool night, and being Massachusetts residents, we all know how the temperature likes to dip in the evenings. This rich but healthy risotto gives us the warm-fuzzies while still being chock full of healthy vegetable goodness. With a fabulous trio of spinach, peas, and asparagus, every bite offers up incredible flavor. We recommend modifying this recipe with vegan parmesan, a little less salt, and an extra zest or two lemon for a slightly healthier but equally as yummy take on this fabulous dish.
Oh salad – you can be quite boring when most people don’t know how to dress you. Never fear – we have just the recipe to make salad exciting again. This tart yet creamy, peppery yet bright salad is everything you could want and more. Vegan friendly without any modifications, this dish is a perfect one for a dinner party with varying diets. Combining arugula and protein packed cannellini beans as well as both lemon and dijon mustard, this salad has a bit of a French countryside vibe with beautiful flavors that meld perfectly together. Bonjour indeed!
While most of us think of radishes as a raw vegetable, a few of us know the delicious secret of roasting radishes. Mellowing out the flavor, roasting radishes give them a bit of a mild turnip flavor – cutting the pepperiness of it significantly. Remember to use unsalted butter in order to control your sodium intake, but feel free to jazz up this miso-glazed radish dish with as many manganese- and calcium-rich sesame seeds as your heart desires. We think you’ll agree that pairing roasted radishes with miso levels up this humble garden vegetable and easily makes it the star of any meal!
We hope you love these recipes as much as we do, and of course, share them with your loved ones!
