Plus, it’s a great way to feed a crowd or to make a big batch for yourself to enjoy over a few days.
Ingredients:
– 1 pound chicken thighs (boneless, skinless, cut into bite-sized pieces)
– 1 pound smoked sausage, sliced
– 1 pound shrimp, peeled and deveined
– 1/2 cup vegetable oil
– 1/2 cup all-purpose flour
– 1 large onion, diced
– 1 bell pepper, diced

– 6 cups chicken broth
– 1 can diced tomatoes
– 2 bay leaves
– 1 tsp thyme
– 1 tsp paprika

2. Add in the onion, bell pepper, celery, and garlic. Cook for another 5-7 minutes until the vegetables soften.
3. Slowly add in the chicken broth, stirring continuously to avoid lumps. Bring the mixture to a simmer.
4. Stir in the diced tomatoes, thyme, paprika, bay leaves, and sausage. Let it simmer for 20 minutes.
5. Add the chicken and shrimp and continue simmering for another 10 minutes until the chicken is cooked through and the shrimp is tender.
6. Serve hot over cooked white rice and enjoy the comforting flavors!
